accurate gyroscope logger

hello,

i'm new arduino , want make gyroscope logger can log accurate data fixed sample rate, , store in sd card csv or txt file.

i have these module :
arduino uno
arduino nano
mpu6050
arduino gy-85
sd card module

my question is:
1. gyro module best project? (accurate , high speed)
2. how can fix gyro sample rate? (25 or 50 or 100 ,... highest possible)
